Fit and Delicious: Healthy Recipes We Love

Use these healthy recipes to start and end your day with meals that are equal parts nutritious and delicious.

Breakfast: To-Go Baked Oatmeal


Breakfast is the most important meal of the day, but it can also be the most rushed. These oatmeal muffins from The Wholesome Dish are easy to make ahead of time so when the morning madness hits, you have one less thing to worry about.

Ingredients:



  • 2 eggs

  • 1/4 cup canola oil

  • 1 cup packed brown sugar

  • 1/2 cup applesauce

  • 1 ½ cups milk

  • 2 teaspoons vanilla extract

  • 1/2 teaspoon salt

  • 1 tablespoon ground cinnamon

  • 3 cups old fashioned rolled oats

  • 2 teaspoons baking powder

  • For Fun: Your favorite fruity, nutty or chocolaty toppings.


Directions:


Preheat your oven to 350 degrees. In a large bowl, whisk eggs, oil and brown sugar until brown sugar is dissolved. Then add applesauce, vanilla, milk, cinnamon and salt to the mixture and whisk to combine. Stir in oats and baking powder. Line muffin tins and fill each with 1/4 cup of the oat mixture. If you're adding toppings, press them into the oat mixture with a spoon. Bake for 30 minutes.

Lunch: Spicy Tuna Wrap


Goodie Godmother takes a classic tuna wrap and spices it up with this simple recipe. The lean protein of tuna paired with carrots, cucumber and avocado will keep you satisfied all day. What's the secret spice factor, you ask? Sriracha.

Ingredients:



  • 1 can solid white albacore tuna in water

  • 1 ½ - 2 tablespoons mayonnaise

  • 1 teaspoon soy sauce

  • 2 teaspoons sriracha

  • 2 wraps

  • 2/3 cup matchstick carrots

  • 1/2 avocado (sliced)

  • 1/2 cucumber (peeled and sliced into sticks)


Directions:


In a small bowl, mix together tuna, mayonnaise, soy sauce and sriracha. Spoon evenly into two wraps and add sliced avocado, carrots and cucumber.

Dinner: Slow Cooker Honey-Orange Drumsticks


Tender chicken, fresh cilantro and a honey-orange glaze ... we're drooling. This chicken recipe from Eating Well is simple and features the "set-it-and-forget it" magic of a slow cooker meal.

Ingredients:

  • 1 tablespoon rice vinegar

  • 1/4 teaspoon crushed red pepper

  • 12 chicken drumsticks (3-3.5 lbs, skin removed)

  • 2 tablespoons chopped fresh cilantro

  • 2 teaspoons toasted sesame seeds

  • 3 tablespoons soy sauce

  • 3 cloves garlic

  • 1 ½ tablespoons minced fresh ginger

  • 1/3 cup honey

  • 2 teaspoons orange zest

  • 2 tablespoons orange juice


Directions:


Mix honey, orange zest, soy sauce, orange juice, vinegar, garlic, crushed red pepper and ginger into a small bowl. Coat your slow cooker with cooking spray and add drumsticks. Pour in the sauce and mix to coat evenly. Cook for 2-3 hours on high or 4 hours on low.

Transfer the cooked drumsticks to a bowl and pour the slow cooker liquid into a medium skillet. Bring to a boil and boil until the liquid is thickened to a syrup (10-15 minutes). You might need to add cornstarch to get sauce to desired thickness. Top with sesame seeds and cilantro before serving.
