The construction is sturdy, so it holds up to firm root veggies, but mine was not terribly sharp. This is actually fine with me--it's sharp enough to do the trick, but not so sharp that I'm nervous about injuring myself in the service of cute garnishes.

Sharp little implementReviewed by Jenn_of_Ark from Arkansas on Friday, January 10, 2014It's hard to tell from the photo but this tool has about a little over 1/8" "V" that drops down about an eighth of an inch from the flat part. So far I've used it to cut V-shaped channels down the length of carrots so when you cut the carrots cross-wise they look like little snowflakes. It's very sharp and easy to use. I used it on celery the same way which makes the celery, and the carrots too, a bit easier to chew in a salad, and fancier, of course.

No one carried them any more. I loaned my to a friend and never got it back. I'm glad now b/c this one is much better than the one that I had. Very easy to make chanels in hard veggies, i.e., carrots!!!!! Great quality for the price.
