The spoon helps you to avoid touching the surface directly and you can use it to stir as well. The only thing I did not like too much about this was the size. It is very, very long. As long as you are aware of that when you buy this thermomether, you´ll be very pleased.

The description explains that you can pull the probe out of the spoon to use it as a regular meat thermometer, which I have done, and that you can use it as a replacement for a candy thermometer when it's attached to the spoon. I bought it mainly for the second use--I don't make a lot of candy, but I do use hot liquids that I need an exact temperature for (mostly oil for frying) and this work especially well when you have a relatively shallow amount of liquid or a smaller pan. In those instances, I've found especially that candy thermometer tend to not clip very well onto the sides of pans, or are often touching the bottom of the pan. I've broken candy thermometers as well, and their fragility always makes me nervous using them. This metal probe is not going to have the same problems as the glass thermometers, and the digital readout is easy to see and you can set the readout easily to Fahrenheit or Celsius. The only negative I have is that I thought this item was more like a wired probe thermometer, but in fact all the electronics are in the plastic handle. Thus, you can't stick the probe in a piece of meat and leave it in the oven for obvious reasons. However, I have had . . . many . . . of those probe style models and they have all failed, some very quickly, and they are terrible for on-stove usage. This thermometer did an excellent job helping me keep oil at an ideal temperature for frying beignets and helped me teach my fiance the importance of proper oil temperature maintenance after he overheated the oil and burnt the first batch b/c he did not use the thermometer. (It takes one AAA battery, and comes with one to start.)

However, I did run it under hot water from the sink faucet and it read the temperature. The digital thermometer slips out of the spoon and can be used as a probe the check the temperature of a roast or other meat. I gave only 4 stars because only time will tell how durable it is.

There are not many kitchen thermometers for measuring the temperature of things in pans, that go up enough for toffee and low enough for yogurt. Most other thermometers do not do both ends. This one does when I make yogurt, and when I make toffee.
If you saw the price of Mastrad products in France and Italy you would grab this. Thank you Sierra for these wonderful Mastrad products. -

I think it is because the candy I was making is thicker and it is harder to get the flow of the candy across the thermometer as the temperature changes. On Candy that is not as thick it seems to work great. I love the silicone spoon, it is much easier to clean the candy off the spoon as well as out of the pan. I can see where it would have a tendency to eat batteries if you use it a lot, and you need a tiny screw driver to change it. My daughter accidentally pulled the digital end of the thermometer away from the long silver part exposing the wire that goes all the way to the end. We were easily able to put it back together and it still works fine. One thing I don't like, the handle is longer then most spoons and I end up holding it at the thin light grey part and it is harder on my hand holding a smaller diameter spoon.
